I present you effect of my cooking lesson in Thailand. Nuch and her father tough me how to prepare Tom Kha Gai (ต้มข่าไก่). It is one of the most popular Thai dishes, easy and quick to make. Special ingredients you can manage to find in most of the Asian supermarkets around the globe or order online.
What will you need?
The main ingredient is of course coconut milk. If you can get a fresh squeezed one the taste will be by far the best. However if you can only get it in cans or boxes it will still work out well for you! Tom Kha Gai includes 3 magic spices which give the soup it’s special flavor. I am talking about galangal root, lemon grass and kaffir lime leaves. Those are the best fresh but getting dried is also a solution if you are not in Thailand. Moreover, the original recipe includes chili but because I was cooking we didn’t add it. We sprinkle green onion on the top in this recipe but you can use coriander or chili instead depending of your preferences.
- 500ml of coconut milk
- 300g of chicken breast
- piece of galangal root
- few leaves of kaffir lime
- 2 stalks lemongrass
- optionally: cabbage, mushrums or onion
- fish souce or salt
- tamarind or lemon
- small spoon of sugar
- handful of green onion, coriander or chili
